Maureen's Tomato Recipe

Here is the easiest recipe for tomatoes thanks to my Italian Grandmother:)

    Take two tomatoes and cut them into medium chunks. These are from our garden. Photo - Maureen McLain
    Take 2-3 scallions or chives and cut them into small pieces. Using scissors makes it very easy. These are from our garden.. I would not use a regular onion because the flavor is too strong. A shallot might work too. Photo - Maureen McLain
    Put the tomatoes and scallions in a bowl. Sprinkle some salt and pepper. Add about 1/4 cup of olive oil. You want more oil than you think. Photo - Maureen McLain
    Let it sit on the counter (not in the refrigerator) for about 20 minutes as you make the rest of your dinner. I like to eat this with Italian bread. Sometimes I take a piece of bread, let it soak up the juice for a few seconds and then put a piece of tomato on top. Photo - Maureen McLain
